Apricot Jam

This jam is made without pectin and the list of ingredients couldn’t be simpler. You will need a very large pot to prepare this in, as the jam boils up double in size during the early stages of cooking.

Beetroot Relish

Ingredients

  • 1 kg beetroots
  • 750 g onion
  • 1 cup sugar
  • 1 tablespoon salt
  • 1 teaspoon allspice
  • 2 cups apple cider vinegar
  • 1 tablespoon plain flour

Method

Peel beetroot and chop roughly. Process both beetroot and onions in batches until very finely chopped.
